Hinba Bakery in Hyndland scoops five Scottish Baker of the Year awards

A West End bakery known for its croissants, pastries and sourdough has been recognised by the best in the business. Hinba Bakery on Hyndland Street took home five awards at the Scottish Baker of the Year Awards 2026, often described as the baking industry's Oscars.
The haul included two Golds and a Best in Scotland category. Hinba won the Gold Regional award for its Empire biscuit and the Gold Regional award for its chocolate olive oil cake, which also went on to be named Best in Scotland. Its pain au chocolat took a Silver Regional award and its white sourdough a Bronze.
The bakery is run by bakery professional Rachel Palmer and her five-strong, all-female team, which includes a Californian bread specialist and a vegan pastry chef.
Rachel said that winning at the awards means earning the respect of fellow professionals, and that taking so many awards is an enormous tribute to the skill and dedication of the team. She explained that they get up early every morning to make sure the racks are filled with fresh bread and pastries, and that it is clear the people of Hyndland and the surrounding neighbourhoods are loving what they do. The bakery uses the best ingredients it can find, preferably Scottish.
Hinba Bakery is part of the Hinba group, which began as a coffee roaster on the Isle of Seil in 2019 and now runs coffee shops, restaurants, a bakery and its roastery across Glasgow and Oban. Group owner Fergus McCoss, whose Glasgow venues also include Tusco on Dumbarton Road and Ziques on Hyndland Street, said the team can be very proud of the recognition.
There is more to come. Hinba is preparing to launch a wholesale operation that will take its award-winning bakes to restaurants, cafes and delis across Glasgow and beyond, so more people will be able to try that champion chocolate olive oil cake.
For locals, though, the best way to enjoy Hinba's baking is still to join the morning queue on Hyndland Street and pick up something warm from the racks.
Hinba Bakery is at 66 Hyndland Street, Glasgow, G11 5PT. Details of all Hinba locations can be found on the Hinba website.
